Agar-agar (also known as kanten, agal-agal) is polysaccharide found in some species of types of red marine algae. This mixture of carbons contains nitrogen, sulfur, etc. Chemically agar-agar is a polymer made up of subunits of the sugar galactose, a component of the cell walls of some seaweed (Sphaerococcus euchema). Dissolved in the hot water and subsequently cooled agar-agar became a jelly. Agar-agar is insoluble in cold water. In the food industry (food additive Е406) agar-agar is used for different types of confectionary (marmalade, marshmallow, chewy candies, filling, and souffle), diet products (jams, confitures), ice-cream.
Apart from that agar-agar is used to provide a living medium for the growth of laboratory cultures, bacteria, fungi, algae.
