Taking into account the level of etherification (SE) pectins can be divided into:
-high ester (HE) with SE more than 50%;
-low ester (LE) with the SE less than 50%.
In practice, the choice of pectin type depends on dry substance content, pH level, chewy texture and the packaging temperature.
